Lasagna Luscious Roma Style

4 T. olive
oil
1 T. clarified
butter
_ lb. pancetta,
finely chopped
2 med.
onions, finely chopped

stalks celery, finely
chopped
1 carrot, finely
chopped
5 cloves garlic,
finely chopped
1 lb. ground
chuck
1 lb. mild Italian
sausage
_ tsp red pepper
flakes
28 oz. can whole
peeled tomatoes (crush by
hand, with juices)
14 oz.
Can diced tomatoes,
drained
2 oz. Tomato
paste
1 cup dry white
wine
2 tsp. each: dried
basil, thyme, oregano
Salt
and pepper

sausage for breakfast, with a
piece of grilled
fish for
lunch, and as a side for the
chicken at dinnertime, it is a
dish that is made almost
every day in every kitchen.
This is my
particular
adaptation of a traditional
Costa Rican recipe.
